Hi Ladies,
Any ideas for some quick and easy meals to serve on the boat. We can get sick of hamburgers and hot dogs very quickly! Any ideas for apps, entrees, desserts?!? |

We're at a dock so we mostly grill for dinner. Like you we get a little tired of the hamburgers and hotdogs, so we also like to make "beer can" chicken with grilled veggies (zucchini, eggplant and corn on the cob) or we'll grill skewers with marinated steak, seafood or chicken. Refrigerator or cooler space is at a premium so a premade dressing does double duty as marinade and salad dressing (and sometimes triple duty, because of the vinegar, as a pain reliever for jellyfish stings!) If you don't have metal skewers, you can use wooden ones, just remember to soak them for 15-20 minutes before cooking.
We also found that the kids and adults enjoy personal-sized grilled pizza. Use pre-made dough, flatten it and cook for 5-6 minutes on each side on a lightly oiled grill. Top it with your choice of sauce, cheese, veggies, etc. Put it back on the grill until the cheese is melted, remove and serve as appetizer or as dinner with a salad.
For dessert, try grilling fresh fruit such as pineapple, peaches or nectarines. You'll find that grilling makes the fruit taste even sweeter. You can also use them as a topping on ice cream or pre-made waffles. For toasting the waffles just put some foil down on the grill and heat each side of the waffle.
